smoked salmon ricotta truffles




1 tub (250 g) Tre Stelle® Mascarpone
1/4 cup (50) Tre Stelle® Ricotta
1/4 cup (50) smoked salmon, chopped into sm. pieces
1 tbsp. (15) capers, drained and chopped
1/2 cup (125) Tre Stelle® Grated Parmesan
1/2 cup (125) fresh dill, chopped


In a medium bowl stir together the mascarpone, ricotta, capers, smoked salmon and 1/4 cup each of the grated parmesan and fresh dill. Refrigerate for 20 minutes.

Using two spoons form the mixture into 1” (2.5 cm) balls

and roll into reserved parmesan or dill.

Chill until firm, about 10 - 15 minutes and serve.

Makes approximately 24 truffles.
