Ingredients
1 | tub (250 g) Tre Stelle® Mascarpone | 1/4 cup (50) | Tre Stelle® Ricotta | 1/4 cup (50) | smoked salmon, chopped into sm. pieces | 1 tbsp. (15) | capers, drained and chopped | 1/2 cup (125) | Tre Stelle® Grated Parmesan | 1/2 cup (125) | fresh dill, chopped |

Instructions
In a medium bowl stir together the mascarpone, ricotta, capers, smoked salmon and 1/4 cup each of the grated parmesan and fresh dill. Refrigerate for 20 minutes.
Using two spoons form the mixture into 1” (2.5 cm) balls
and roll into reserved parmesan or dill.
Chill until firm, about 10 - 15 minutes and serve.
Makes approximately 24 truffles.
