Instructions
Have your fishmonger gut and descale the fish.
Rub the inside and outside with olive oil. Sprinkle salt and pepper inside and out. Stuff the cavity with herbs and lemon slices.
Decorate the outside of the fish with herbs and lemon slices.
Roast at 425 degrees for about 15-20 minutes, depending on the size of the fish.
Serve on a platter with lemons.
