Sardine Factory Fettuccine Alfredo

2 gal. water
1 tbsp. salt
1 lb. fresh fettuccine
1/4 lb. butter
1 egg yolk
1/4 cup heavy cream
1/2 cup fresh grated Parmesan cheese
Salt and pepper to taste

Instructions

In a large pot bring 8 quarts water to a boil; add salt. Very gently drop in the fettuccine. Stir with a wooden spoon for a few moments to separate noodles. Cook at a gentle boil for only a few minutes until al dente. Pour fettuccine into a colander to drain, and then into a large heated serving bowl. Cream butter until fluffy; add egg yolk and cream and beat constantly while adding cheese a tablespoon at a time. Add cheese mixture to fettuccine and season as desired with salt and pepper. Toss very gently.
