1 lb. boneless, skinless chicken
breasts, cut into strips
1 pkg. (1-1/4 oz.) taco seasoning
2 tbsp. canola oil
1 can (14 oz.) diced tomatoes, undrained
1/3 cup peach preserves
Cooked rice or
noodles

Instructions

Coat chicken strips with taco seasoning; saute in a large skillet until done. Stir in tomatoes and peach preserves; simmer for 10 minutes. Serve over hot rice or noodles.
