2 | bell peppers, halved and pitted | 2 tbsp. | olive oil | 1 clove | garlic, sliced | 2 | scallops, halved | 2 tbsp. | pesto | | Salt and freshly ground black pepper, to taste | | Freshly grated Parmagiano-Reggiano cheese | | Basil leaves, for garnish |

Instructions
Place the peppers in a pan greased lightly with olive oil. Top peppers with olive oil and sliced garlic. Add salt and pepper, to taste. Bake at 350°F for 40 minutes. Remove from oven, and place scallops inside the peppers. Top with pesto. Place in oven and bake for 10 minutes. Remove and garnish with grated cheese and basil leaves.

A quick little appetizer I picked up from an Italian cookbook... Sounds weird to throw the scallops inside, but the flavors came together somethin' beautiful.
