beets, peeled and chopped into 1/2-inch pieces

Instructions
Peel and chop the beets, and place in a casserole dish. Drizzle with olive oil, and move the beets around in the pan with a wooden spoon until they have been lightly touched on each side with the oil. Sprinkle salt and pepper over the top. Cover with aluminum foil, and bake in a 425F oven for 1 hour and 5 minutes, or until a fork can be inserted into the beet and removed easily.
