Ricotta & Pineapple Stack

1 (125) golden pineapple, peeled and cut into 8 - Â1/2” slices
1 cup (250) Tre Stelle® Extra Smooth Ricotta Cheese
1/2 cup (125) Tre Stelle® Mascarpone Cheese
1/4 cup (50) granulated sugar
2 tbsp. (30) candied ginger, cut into tiny cubes
1/4 cup (50) shredded coconut
1 fresh starfruit, sliced for garnish, if desired


Chop four pineapple slices into ¼ ” cubes and place in a bowl; add Ricotta, Mascarpone, granulated sugar and candied ginger, stir until combined.
Place each slice of pineapple on individual serving plates; top with a large tablespoonful of mixture and top with equally with shredded coconut. Garnish with slices of fresh starfruit if desired
