Ingredients
1 (125) | golden pineapple, peeled and cut into 8 - Â1/2” slices | 1 cup (250) | Tre Stelle® Extra Smooth Ricotta Cheese | 1/2 cup (125) | Tre Stelle® Mascarpone Cheese | 1/4 cup (50) | granulated sugar | 2 tbsp. (30) | candied ginger, cut into tiny cubes | 1/4 cup (50) | shredded coconut | 1 | fresh starfruit, sliced for garnish, if desired |

Instructions
Chop four pineapple slices into ¼ ” cubes and place in a bowl; add Ricotta, Mascarpone, granulated sugar and candied ginger, stir until combined.
Place each slice of pineapple on individual serving plates; top with a large tablespoonful of mixture and top with equally with shredded coconut. Garnish with slices of fresh starfruit if desired
