Ingredients
1 lb. | dried Anasazi beans | 6 cups | water | 1/4 cup | finely chopped onions | 1 clove | garlic, crushed | 6 slices | bacon, chopped | 1/4 cup | finely chopped green pepper | 1 | jalapeno, diced | 1 tsp. | chili powder | 1/2 tsp. | cumin | 1/4 tsp. | cayenne powder | | Salt and pepper, to taste |

Instructions
In a saucepan, combine beans and water and cook at a gentle boil for 1-1/2 hours or until tender. Drain beans, reserving liquid. In a skillet, saute onion, pepper, garlic and bacon. Add sauteed ingredients to beans and mash all together, adding liquid a little at a time, until mixture is smooth. Serve with tortillas or cornbread.

The Anasazi beans make this recipe much sweeter than most refried bean recipes.
Note: These refried beans may be frozen for later use.
