Ingredients
1 lb. | dried Red Beans | 1/2 lb. | smoked sausage thinly ( I use chicken) | 3 | celery ribs | 1/2 | green, red, yellow, and orange bell pepper | 1 md. | yellow or | | white onion | 4 cloves | garlic minced | 1 tbsp. | creole/slap your mama seasonings | 7 cups | chicken broth | 3 cups | long-grain white rice/ brown rice |

Instructions
Pick and wash beans, place in dutch oven, and add water to 2 inches above the beans. Bring to a boil. Boil for 1-2 minutes; cover and remove from heat and soak for 1 hour, then drain.
Saute sausages, chopped,celery, bell peppers, and onion in dutch oven, over medium heat till sausage are brown about 10 minutes, add garlic saute 1 minute, add beans, seasoning, and the 7 c chicken broth. Bring to a boil; reduce heat to simmer, until beans are tender about 1- 1 1/2 hours.
Cook rice, serve with red beans, Garnish if desired with slice green onion/ chopped parsley.

This recipe can be cooked in your slow cooker for 6-7 hours covered on high or until tender.
