Red Beans and Rice
|This is my Southern Recipe With A Slight Change|
|1 lb. ||dried Red Beans|
|1/2 lb. ||smoked sausage thinly ( I use chicken)|
|3 ||celery ribs|
|1/2 ||green, red, yellow, and orange bell pepper|
|1 md. ||yellow or |
|4 cloves ||garlic minced|
|1 tbsp. ||creole/slap your mama seasonings|
|7 cups ||chicken broth|
|3 cups ||long-grain white rice/ brown rice|
|Garnish green onion / parsley|

Pick and wash beans, place in dutch oven, and add water to 2 inches above the beans. Bring to a boil. Boil for 1-2 minutes; cover and remove from heat and soak for 1 hour, then drain.
Saute sausages, chopped,celery, bell peppers, and onion in dutch oven, over medium heat till sausage are brown about 10 minutes, add garlic saute 1 minute, add beans, seasoning, and the 7 c chicken broth. Bring to a boil; reduce heat to simmer, until beans are tender about 1- 1 1/2 hours.
Cook rice, serve with red beans, Garnish if desired with slice green onion/ chopped parsley.
This recipe can be cooked in your slow cooker for 6-7 hours covered on high or until tender.
