Red Beans and Rice

This is my Southern Recipe With A Slight Change

1 lb. dried Red Beans
1/2 lb. smoked sausage thinly ( I use chicken)
3 celery ribs
1/2 green, red, yellow, and orange bell pepper
1 md. yellow or
white onion
4 cloves garlic minced
1 tbsp. creole/slap your mama seasonings
7 cups chicken broth
3 cups long-grain white rice/ brown rice


Garnish green onion / parsley


Pick and wash beans, place in dutch oven, and add water to 2 inches above the beans. Bring to a boil. Boil for 1-2 minutes; cover and remove from heat and soak for 1 hour, then drain.
Saute sausages, chopped,celery, bell peppers, and onion in dutch oven, over medium heat till sausage are brown about 10 minutes, add garlic saute 1 minute, add beans, seasoning, and the 7 c chicken broth. Bring to a boil; reduce heat to simmer, until beans are tender about 1- 1 1/2 hours.
Cook rice, serve with red beans, Garnish if desired with slice green onion/ chopped parsley.

Author's Comments

This recipe can be cooked in your slow cooker for 6-7 hours covered on high or until tender.
