Ingredients
1/2 qt. | homemade chicken stock (the most important ingredient) | 4 oz. | raw beef (sirloin or | | fillet), cut in very thin strips | 3-1/2 oz. | rice noodles | 1 handful | coriander (cilantro) | 2 cloves | garlic, chopped | 1 piece | ginger, chopped | 2 | chillis, chopped | 3 | shallots, chopped | 2 tbsp. | nam pla | 1 stalk | lemon grass, chopped | 1 tbsp. | sake | 1 tbsp. | lime juice |

Instructions
Quickly boil the noodles in boiling salted water; drain and add a small heap to a bowl. Place meat strips on top. Sweat off the aromatic vegetables in a separate pan for 2 minutes; add the chicken stock. Allow to simmer for 5 minutes. Add sake, nam pla, lime juice and season to taste. Add a lot of chopped fresh coriander and pour gently over the noodles and meat. The heat in the stock will instantly cook the beef. Serve with a little more chopped coriander.
