Quick Beef Stew

1 lb. beef, cooked and cut up
4 md. carrots, cut into 2-1/2-inch strips
3 md. potatoes, peeled and cut into 1-1/2-inch pieces
1 cup celery, sliced
1 pkg. onion soup mix
3 tbsp. unbleached flour
2-1/4 cup water


Mix all ingredients in 2-1/2 qt. casserole. Cover and microwave on high (100%) to boiling, 10 to 12 minutes. Stir. Cover and let stand 5 minutes. Microwave until vegetables are tender, 10 to 12 minutes more, stirring at 5-minute intervals. Let mellow for 10 minutes.

Author's Comments

You may substitute 1 can whole new potatoes. Add 5 minutes before end of cooking.
