Ingredients
2 tsp. | olive oil | 2 cloves | garlic, minced | 1 can (4 oz.) | mushrooms | 1/2 cup | onions, chopped | 1 | md. red bell pepper, chopped | 1/4 to 1/2 cup | banana peppers, chopped (optional) | 1 cup | tomatoes, diced | 1 can | refried beans | 1/2 cup | salsa | 4 | tortillas | 1-1/3 tbsp. | butter | | Cheddar cheese |

Instructions
Cook garlic in oil in skillet on low heat until lightly browned. Raise heat to medium. Add onions, cook for 2-3 minutes. Add mushrooms and peppers, cook 2-3 minutes. Add tomatoes, cook 1-2 minutes. Divide into 4 separate bowls. Mix beans and salsa in a bowl. Heat in microwave 1-2 minutes until warm. Divide into 4 parts and mix in with veggies.
Add 1 tsp. butter to hot skillet. Let melt partially. Put burrito in skillet and turn quickly for 15 seconds to let butter cover bottom of burrito. Put bean/veggie mixture in middle of burrito. Place handful (more or less as desired) of cheddar cheese on top. Let cook for 30 seconds. Use spatula to fold burrito over, careful not to let inner ingredients spill onto skillet. Let cook until slightly browned; flip; let cook until slightly browned. Place on serving plate. Repeat with next 3 tortillas. Serve warm.

This is a family favorite. It is a standby for when we want a quick meal.
Throw in any other favorite veggies that you wish.
Add 1 tsp. habanero pepper sauce to bean/salsa mixture for a little zest!
