Portobello Burgers

1/2 cup Italian dressing
4 portobello mushrooms, stemmed, tops cleaned
1/2 cup pesto sauce
4 kaiser rolls, sliced in half
1/2 cup bottled roasted red bell peppers, drained
4 slices provolone cheese


Combine mushrooms and Italian dressing in a bowl. Cover and marinate 2 hours. Prepare grill or turn on broiler. Season mushrooms with salt and pepper to taste. Grill or broil mushrooms about 1-1/2 minutes per side. Spread 1 Tbsp. pesto over cut side of rolls. Top with mushrooms. Top with a slice of cheese, roasted peppers and remaining half roll.

Instead of using Italian dressing, I used olive oil, balsamic vinegar and salt/pepper. I marinated the mushrooms overnight before grilling. These portobello burgers are a great option for vegetarians at your next barbecue. The toppings and condiments are what make the burger exciting.

Goodness, the way Barb made this recipe was devine (see her review for alterations to the recipe). I've never had such a delicious and juicy portebello patty. Really good with pesto, blue cheese, and a leafy green or two.
