Heat oven to 400°F. Mix the soy, honey and garlic. Place pork in baking dish, pour sauce over and turn to coat. Sprinkle with sesame seeds. Roast for 20 minutes in the oven. After 20 minutes, spoon sauce over pork, cover loosely with foil, roast for about 10 more minutes.
In the meantime, place the seasoned flour in a large zip-top bag, add the separated onion rings, and shake to coat. Heat some olive oil in a skillet and cook the onions till dark and caramelized. Serve onions with the pork.
We sliced the pork right in the pan and let it soak up the juices from the bottom of the pan.

Totally fast, delicious dinner! The pork comes out so juicy and tender, and it's so fast to throw together.
I thought this was absolutely delicious! I didn't like the way that the onions turned out with the flour though, it stuck to the pan and got clumpy. In the future I will just carmelize them the onions without flour. But altogether excellent!
