Pork Medallions with Garlic Ginger Plum Sauce

Instructions
Trim visible fat and slice the pork tenderloin into medallions about 1/2 inch thick. Season with salt, pepper, and garlic powder, omitting any that the children dislike. Heat a large nonstick skillet over medium high heat for 2 minutes. Place the medallions in the skillet so that they do not overlap. Cook for 3 to 4 minutes on each side or until cooked through. Remove from the skillet and keep warm in the oven until ready to serve.
For the children, serve the pork with plum jam on the side. For the grown-ups, serve the pork with the Garlic Ginger Plum Sauce spooned over the top.
FOR THE GARLIC GINGER PLUM SAUCE: Wipe the skillet with paper towels. Pour the olive oil into the center of the skillet and heat for 2 minutes over medium high heat. Add the ginger and garlic to the oil. Stir for 2 to 3 minutes until fragrant. Add the plum jam and balsamic vinegar. Heat through and serve.
Serves 2 adults and 2 or 3 children.

Two Tiered Meals To Please Both Parents and Kids. Fast and tasty dish. We love the sauce. Pork tenderloin is sliced into thin medallions, then quickly pan seared. Plum jam and balsamic vinegar form the base of this sweet garlicky and gingery sauce. For the children, simple plum jam accompanies the pork, or substitute applesauce if more to their liking.
