Pickled Tomato Salad

3 lg. tomatos, cut into eighths
1 md. green pepper, chopped
1 md. red onion, thinly sliced into rings
2 tbsp. minced fresh basil
1/2 cup frozen apple juice concentrate, thawed
1/2 cup cider vinegar
1/4 tsp. salt
1 tbsp. vegetable oil
1 tsp. sugar
1 tbsp. pickling spices, tied in a cheesecloth bag

Instructions

In a bowl, combine tomatoes, green pepper, onion and basil and set aside. In a saucepan, bring remaining ingredients to a boil. Reduce heat and simmer for 5 minutes. Remove pickling spices. Cool to room temperature. Pour over vegetables. Cover and refrigerate at least 1 hour before serving.
