3 | lg. tomatos, cut into eighths | 1 | md. green pepper, chopped | 1 | md. red onion, thinly sliced into rings | 2 tbsp. | minced fresh basil | 1/2 cup | frozen apple juice concentrate, thawed | 1/2 cup | cider vinegar | 1/4 tsp. | salt | 1 tbsp. | vegetable oil | 1 tsp. | sugar | 1 tbsp. | pickling spices, tied in a cheesecloth bag |

Instructions
In a bowl, combine tomatoes, green pepper, onion and basil and set aside. In a saucepan, bring remaining ingredients to a boil. Reduce heat and simmer for 5 minutes. Remove pickling spices. Cool to room temperature. Pour over vegetables. Cover and refrigerate at least 1 hour before serving.
