Pesto Baked Potatoes

4 potatoes, baked in oven or
microwave
1/4 cup pesto
1/4 cup light or
fat-free sour cream
Grated asiago or
Parmesan cheese, to taste

Instructions

Slice off top quarter of baked potatoes. Scoop out interior and break up with a fork. Stir in pesto, sour cream and cheese. Mound in shells. Sprinkle with more cheese. Broil 4 inches from heat, until golden.
