Peruvian Skewered Steak (Anticuchos)

2 lbs. | sirloin steak, cut in 1-inch cubes | 1-1/2 tsp. | salt | 1/2 tsp. | dried ground chili peppers | 6 | peppercorns | 1/4 tsp. | saffron | 3 cloves | garlic, minced | 1 cup | wine vinegar | 1/2 cup | water | 1/4 cup | olive oil |

Instructions
Trim the fat from the meat. In a bowl, mix together the salt, chili peppers, peppercorns, saffron, garlic, vinegar, and water. Add the meat and marinate overnight in the refrigerator.
Drain the meat; reserve the marinade. Thread the meat on 4-6 skewers; brush with the olive oil. Broil as close to the heat as possible 6 minutes, or to desired degree of rareness, turning and basting frequently with the marinade. Serves 4-6.
