Peach and Cherry Summer Refrigerator Pie

A Family Tradition....Looks Beautiful and is Easy to Make! Always Gets Rave Reviews!

1 pie crust, baked and cooled
1/4 cup tapioca
1 cup sugar
1-1/2 cup water
1/4 tsp. salt
2 tbsp. lemon juice
2 to 3 cups sliced fresh peaches
Maraschino cherries cut in half (the kind of cherries in jars at supermarket) I don't measure....but probably use about 1/3C cherries. Just use whatever you like!
Whipped cream topping


Cook the tapioca, sugar, salt, water and lemon juice til clear and thick. Cool slightly. Add vanilla, sliced peaches and cherries.

Pour into cooled pie filling and refrigerate. When cool, top with whipped cream.

This recipe has been in my family for years...I believe it is an original that my mother devised as a way to use fresh summer peaches.

It is very easy to make and it is delicious! Always get rave reviews whenever I make it.
