Ingredients
1 tbsp. | olive oil | 1/2 cup | onion | 2 tbsp. | shallots | 1 clove | garlic | 1-1/2 oz. | bourbon whiskey | 1/4 cup | balsamic vinegar | 1 tsp. | Worchestershire sauce | 10 tbsp. | brown sugar | 1/2 tsp. | salt | 1/2 tsp. | fresh ground pepper |

Instructions
In a sauce pan, saute onions in olive oil until translucent. When onions are soft, add the shallots and garlic. Add in the boubon, balsamic vinegar, 2 tbsp. brown sugar and salt and pepper. Bring mixture to a boil, then reduce to a simmer. After mixture has reduced to 1/3 of original level, check seasoning. Add remaining sugar, salt and pepper to bring balance to mixture. (There should be a balance between the sweet, and sour.) Salt, will bring out the flavors, salt until the flavors become bright, but not too salty. Serve hot over raw spinach or use for a beef marinate. Enjoy.

History: This sauce was created as a marinate for steaks, but, I tasted it with some raw spinach and decided that it was even better as a dressing for spinach salad. Spinach salad can be as diverse as any salad that you make. We like to add red, yellow bell peppers, hard-cooked eggs, mushrooms, basically anything that you might add to any other green salad.
