Mouthwatering Paella with sustainable Norwegian seafood |
Ingredients
| 500g of Norwegian cod | | 200g of Norwegian cooked, peeled prawns | 2 tbsp. | of olive oil | | 500g of rice | 1 clove | of garlic | 1 | red pepper | 1 | onion | 8 | cherry tomatoes | | 1g of saffron | 1 cup | of green peas | 1 | litre of fish stock | 4 | lemon wedges | | Salt and pepper |

Instructions
Preheat oven to 200˚C/fan 180˚C/gas mark 6.
Chop the onion, julienne the pepper and fry with rice and a pressed clove of garlic for a few minutes.
Add the saffron to create a broth and cook for 10 minutes in the oven.
Cut the cod into pieces, and along with the vegetables, add to the pan.
Simmer in the oven another 10 minutes.
Season with salt and pepper.
Add the prawns (allow to heat through thoroughly) and serve with lemon wedges.
