Combine chocolate, sugar and whipping cream in a medium-size heavy saucepan. Stir over low heat until chocolate is melted. Increase heat to medium and bring mixture to a boil. Boil, stirring constantly, until sauce is smooth and thick, 4-5 minutes. Remove from heat and stir in vanilla.
To serve:
Put each topping in a separate bowl. Set out buffet-style: Bowl of ice cream, Hot Fudge Sauce, bowls of toppings. Let guests serve themselves.

Hot Fudge Sauce can be prepared and refrigerated for several weeks in a wide-mouth container or bowl. It will become firm when cold but will thin down when reheated. Reheat in a heavy saucepan over low heat or in the microwave.
Use your imagination when selecting toppings - whatever you like and as big a variety as you have bowls!
