Oven Roasted Carrots

2 lbs. baby carrots
1 red onion, halved and sliced
1/4 cup olive oil
3 to 4 cloves garlic, minced
1 tsp. oregano
1 tsp. sweet basil
1 tsp. parsley

Instructions

Combine olive oil and herbs. Place carrots in a mixing bowl and toss with the herbed oil. Put all in roasting pan and roast at 450°F for 20-25 minutes or until browned. Serve immediately. Enjoy.

I forgot the onions and used dried oregano and basil. They were not completely done after 25 minutes, however, they tasted pretty good. They would probably have been much better had I let them "brown" like the recipie says and used fresh spices.

I'm going to try this one again, with "fresh" ingredients and a longer roasting time.

BTW: 2lbs was a little much for 6 adults and two kids.
