Orazio's Bruschetta

6 md. tomatoes, diced
1/2 cup olive oil
2 tbsp. chopped fresh basil
1 tbsp. balsamic vinegar
2 tsp. coarsely ground black pepper
1 tsp. salt
8 slices Italian bread (each 1-inch thick)
Romano cheese


In a bowl combine all of the above ingredients except bread and cheese. Cut some Italian bread into thick slices and toast lightly if too soft to prevent it from getting too soggy. Top the bread with the tomato mixture and bake in a 350°F oven for 8 minutes. Place on plate and top with Romano cheese.
