1 md. head iceberg lettuce, torn
2 cups torn red leaf lettuce
1 md. ripe avocado, peeled and sliced
1/4 cup orange juice
1 cucumber, sliced
1/2 md. red onion, thinly sliced
1 can (11 oz.) mandarin oranges, drained

Dressing

1/2 cup orange juice
1/4 cup vegetable oil
2 tbsp. red wine vinegar
1 tbsp. sugar
1 tsp. grated orange peel
1/4 tsp. salt

Instructions

In a jar with tight-fitting lid, combine dressing ingredients; shake well. Chill. Just before serving, toss greens in a large salad bowl. Dip the avocado slices into orange juice; arrange over greens (discard remaining juice). Add cucumber, onion and oranges. Serve with dressing.

i thoroughly enjoyed this salad. i also added asparagus and thought it was a nice compliment. we had guests over and i've been asked for the recipe. everyone loved it. it's so light and refreshing.

This was fabulous! I do not usually have iceberg lettuce on hand, but I had a head in my crisper for another recipe. When I saw this recipe, I thought it would be a good way to get rid of the lettuce. I must say, I may start keeping a head of iceberg around just to make this recipe... especially during the summer months. The dressing was delicious. It was very light and very refreshing. I have plenty of dressing left over to make a couple more salads. This recipe will go with anything!!! It is a must try!

Very Good salad... I got lots of compliments on this one. I added in some turkey bacon to it. I was very good!!!
