Pre-heat oven 400 degrees. Beat egg. Add the rest of the ingredients (except for raisins) and stir (do not beat) until moist. Stir in raisins. Use Non-Stick spray on muffin pan before putting batter in pan. Bake 15 minutes. (Some ovens may require as long as 18 minutes, but I have always baked them for only 15 minutes).

My wife's ole family recipe from generations past. The cinnamon and nutmeg add to the great taste of the muffins. My wife also loves the muffins with pecan chips.
