No Knead Whole Wheat Bread



2 loaves



3 cups whole wheat flour
1/2 cup sugar
2/3 cup dry milk
1/4 cup soy flour
2-1/2 tbsp. wheat germ
2 tbsp. salt
3 pkg. dry yeast
4-1/2 cup water
1/2 cup oil
2 eggs
5-1/2 cup unbleached white flour


Combine dry ingredients (except white flour) in a large mixing bowl. Mix together water and oil and warm to 120°F-130°F in microwave. Beat eggs into water/oil. Add liquid ingredients into mixing bowl; blend at low speed until moistened.

Add unbleached white flour and stir in by hand. Cover and let rise until doubled. Stir down and pour into 2 large bread pans. Bake immediately at 375°F for 35-40 minutes. Remove from pan. Should sound deeply hollow when tappend on bottom. Cool on rack.
