No-Bake Banana Oatmeal Cookies

240g/8.5oz ripe bananas, cut into chunk
150g/5.25oz vegan chocolate chips
60ml/2fl oz coconut oil
30g/1oz chia seeds
7.5g/0.25oz cocoa powder
200g/7oz quick-cooking oats
10ml/0.33fl oz vanilla extract
15ml/0.5fl oz maple syrup

1.Combine bananas, chocolate chips, coconut oil, chia seeds, cocoa powder and maple syrup in a sauce pan. 2.Simmer over low heat until bananas are fully tender, about 5 minutes.
3.Mash the bananas using a potato masher and continue heating for another 5 minutes.
4.Turn off the heat and stir in the vanilla.
5.Fold in the oats.
6.Spoon onto a baking sheet lined with parchment paper.
7.Leave in the chiller for an hour to set.
