New Orleans Spinach Crabmeat Casserole

6 tbsp. butter
1 cup onions, chopped
1/4 cup green onions, chopped
1 pkg. (1-1/4 lb.) frozen spinach, chopped
1 pint sour cream
1/2 cup parmesan cheese, grated
1 jar (14 oz.) artichoke hearts, drained
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. Worcestershire sauce
1/4 tsp. Tabasco sauce
1 lb. crabmeat
1/2 lb. cooked shrimp

Instructions

Preheat oven to 350°F. In a heavy skillet, melt butter and saute‚ onions and green onions until they are soft but not brown. Add spinach, sour cream and cheese. Reduce heat and simmer until heated throughout. Add artichoke hearts, salt,pepper, Worcestershire sauce and Tabasco Sauce; simmer 2-3 minutes. Gently fold in crab meat and shrimp. Pour into a 2 quart casserole. Bake for 20-30 minutes.

Wonderful! I am allergic to shrimp, so I had to leave it out. I also substituted
diced imitation crab because that's what
I had on hand. My husband even liked it!
He had a second helping.

I left out the shrimp completely. Due to a miscalculation, I had only half the sour cream on hand but added another 8 ounces of whole milk yogurt. I would recommend at least quartering the artichokes to spread them in the servings. I got a request from a guest for the recipe so I am sending it on.

Very good and you can make it ahead and refrigerate until time to cook!
