6 to 8 chicken breasts
Salt and pepper
1 can (10-3/4 oz.) cream of mushroom soup
1 can (10-3/4 oz.) cream of chicken soup
1 sm. onion, diced
1 can (10 oz.) diced tomatoes with green chilies, drained
1 jar (8 oz.) Cheez Whiz
1 pkg. cheesy plain Doritos or
other corn chips, crushed
8 oz. grated cheddar cheese
4 oz. grated mozzarella cheese
Paprika, to garnish

Instructions

Steam or boil the chicken breasts until cooked through (I use my steamer and find it makes the chicken perfectly moist and tender). When cool, dice into bite-size pieces. In a large saucepan over medium heat, mix the soups, onion, Ro-tel tomatoes and Cheez Whiz until blended.

Preheat oven to 350°F. Layer the bottom of a greased 9x12-inch casserole dish with crushed chips. Next, layer half the chicken pieces. Top with half the sauce. Sprinkle with half the cheddar cheese. Repeat the layers, but top with the Cheddar and Mozzarella. Sprinkle paprika over the top to garnish. Bake for 30-45 minutes, or until hot and bubbly.

It's Cheez Whiz! And Canned Soups! And Doritos! Yes, it's trashy food. But it's always the first thing to go at a potluck, and I make no apologies.

Excellent casserole. Both my husband and step-
daughter loved it. My 9-year-old, refused as is her tendency with most new foods. I'll try her on it again.

Only change I made was to forego the Cheese Wiz. Used more cheddar in its place.
