I make a fool of myself in the kitchen even though I like to eat and watch Emeril all the time. Two days ago, wrapping up our Thanksgiving shopping, my wife wants to buy a store bought, Mrs Smith's Pie. Non-starter! I love pecan pie, and decided to bake one myself. Your recipe was spot-on, and everyone loved it. In fact, I'm going to bake another in a few minutes. This is about as close to Mom's secret recipe as I'll ever come. Concur that the maple syrup is the reason it tastes so good.

Instructions
Mix sugar, syrup and butter. Whisk in eggs. Add vanilla, vinegar and salt. Stir in pecans and stir to thoroughly coat them. Pour into unbaked pie shell. Bake at 350°F for 50 to 60 minutes.

This looks the best if you use entire pecan halves. I have even arranged the pecan halves in concentric circles, which was way too much work but looked spectacular. I think the halves are too big and the pie tastes better if the pieces are smaller. I have been thinking cutting the halves into quarters lengthwise would still look nice but be smaller than halves.<br />
