12 lg. mushrooms, cut and quartered
1 lb. spinach, blanched and stemmed
1 tbsp. finely chopped garlic
1/2 tsp. white pepper
1/2 tsp. seasoned salt
2 tbsp. butter, melted
1 cup Swiss cheese, shredded
Hollandaise sauce

Instructions

Blanch spinach until tender; rinse and add seasonings. Layer spinach mixture in 6 casserole dishes. Arrange 8 pieces of mushrooms on top of spinach. Bake 5 minutes at 450°F. Top with Swiss cheese and put under broiler until browned. Garnish with tomato rose or stuffed tomato.
