My mother used to make Monkey Bread all the time but in a loaf pan, I doubt it makes much difference.
But she would lay one layer of the coated bisuit quarters and then pour on half the brown sugar/butter mix and add the rest of the biscuits to the top and use the other half of the brown sugar/butter mix on top. I think it gives better coverage.
I guess it's what you rather do.

Instructions
Grease a Bundt pan. Mix together the white sugar and cinnamon. Cut biscuits into quarters and dip into the sugar mixture. Then place them into the pan. Pour the remaining sugar mixture over the biscuits. Cook together and bring to a boil the brown sugar and butter. Pour over the biscuits. Bake at 350ºF for 30 minutes. Let stand for 10 minutes to cool a little and then turn over onto a plate.
