Mocha Muffins

1 dozen



4 oz. butter
4 oz. brown sugar
1 tbsp. golden syrup/karo syrup
3/4 cup strong brewed coffee, cold
1/2 cup yogurt
1 egg
3 cups all-purpose flour
1 tbsp. baking powder
1/2 cup chocolate chips


Preheat oven to 375°F/190°C. Melt together the butter, brown sugar and syrup in a small pot. Sugar doesn't need to dissolve. Mix until well combined. Leave to cool. In a large bowl, beat together coffee, yogurt and egg. Add cooled melted mixture and mix well. Sift together flour and baking powder in another bowl. Add chocolate chips and mix through. Add to liquids and fold in very gently until flour is just wet. Fill 12 greased muffin cups with mixture and bake for about 15 minutes, until a skewer poked in the middle comes out clean. Cool on a wire rack.
