1 flour tortilla
4 to 5 tbsp. canned refried beans
1/3 cup shredded cheese (cheddar, co-jack or
monterey jack)
Salsa (optional)

Instructions

Spread beans to edges of tortilla. Top with salsa, if desired. Sprinkle with cheese. Bake or broil until cheese is bubbly. Cut into wedges.

Author's Comments

For crisper tortilla, cook in covered non-stick skillet over low heat. For extra taste, top with chopped lettuce and tomato.
