Mediterranean Lasagna

1-1/2 lb. (750) hot Italian sausage, removed from casing
1 md. onion, coarsely chopped
3/4 cup (175) diced red pepper
3/4 cup (175) diced green pepper
1 jar (750) spaghetti sauce
1 tsp. (5) dried oregano leaves
1/3 cup (75) sliced pitted black olives
9 lasagna noodles
1 tub (475 g) Tre Stelle® Ricotta Cheese
1/3 cup (75) Tre Stelle® Grated Parmesan Cheese
1/2 cup (125) chopped parsley
1 egg
1 pkg (454 g) Tre Stelle® Mozzarella Cheese Ball
2 tbsp. (25 mL) Tre Stelle® Grated Parmesan Cheese (Optional)


In a non stick skillet brown sausage, stirring to break up pieces. Add vegetables and continue cooking until sausage is cooked through and vegetables are tender. Drain. Stir
in sauce and oregano. Simmer uncovered for 10 minutes.

Stir in olives. Meanwhile, in a large pot of boiling water, cook lasagna noodles just until tender; drain. Combine Tre Stelle® Ricotta, Parmesan, parsley, and egg;stir to blend evenly. Slice 2/3 of Tre Stelle® Mozzarella and coarsely shred the remainder. Generously butter a 9x13-inch (33 x 23 cm) baking dish and place a single layer of cooked lasagna noodles in the bottom. Spread with 1/2 the meat
sauce, 1/2 Ricotta mixture, and 1/2 the sliced Mozzarella. Cover with a layer of noodles, the remaining Ricotta and the remaining sliced Mozzarella. Top with the remaining noodles and the remaining meat sauce. Sprinkle with the shredded
Mozzarella, and if desired, additional Parmesan. Cover with lightly greased foil and bake at 350ºF (180ºC) for 50-60 minutes or until heated through.

Uncover and continue cooking 5-10 minutes. Let stand 10 minutes before serving.
