2 tsp. | cornstarch | 1/3 cup | sugar | 1/2 tsp. | salt | 1/8 tsp. | pepper | 2/3 cup | vinegar | 1/3 cup | water or | | beet liquid | 3 cups | sliced cooked beets | 1 tbsp. | butter |

Beets are beets. You can do any thing to them and they taste the same.

Instructions
Mix cornstarch with sugar, salt and pepper. Stir in vinegar and water. Cook over low heat, stirring constantly until mixture is smooth and thickened. Add cooked beats and reheat. Stir in butter just before serving.
