3/4 cup mashed potatoes, cold
4 cups coconut, shredded
4 cups confectioners sugar
1-1/2 tsp. vanilla
1/2 tsp. salt
4 oz. baking chocolate

Instructions

Mix potatoes plain mashed (no butter, milk or salt added) and confectioners sugar. Stir in coconut, vanilla and salt. Blend well. Press into one large or two small pans, so that candy is about 1/2 inch thick. Melt chocolate in double boiler, on low heat, do not allow water to boil. Pour over top of candy and cool in refrigerator. Cut in Bite size squares.

Author's Comments

For variation you can roll in balls, and roll in cinnamon for Pattys' day or shape in 1-inch high cones, and dip base in chocolate, forming little haystacks.

1 small baked or boiled potato ( egg size)
enough powdered sugar to form dough
1/2 stick softened butter
peanut butter

cool potato completly, mash with fork, mix in butter and start adding sugar, it will liquify at first, keep adding small amounts until stiff dough forms, it will feel stiff like pie dough

roll out on plastic wrap or well dusted with powdered sugar surface, roll into a rectangle keeping as even in thickness as possible

spread peanut butter over surface to edges

roll up jellyroll fashion using short side

slice in 1/2" pieces as you serve it,(do not slice all at once) it drys easily keep tightly wrapped in plastic wrap or foil
