Mango Salsa

4 to 6 servings



2 tbsp. red onion, minced
2 cups boiling water
2 md. ripe mangoes, peeled and diced
1 lime
2 tbsp. fresh cilantro, minced
1 clove garlic, minced
Salt to taste


To cut the bite of the red onion, pour the boiling water over it; drain.
Combine onion and remaining ingredients in a bowl and refrigerate at least two hours, or overnight.

Author's Comments

Serve with chips, or as a condiment to any grilled meat. It's also great as a salad dressing!
