1-1/2 cup yogurt
1/2 lemon, juiced
1 mango
1 cucumber
1 tbsp. mint
1 tbsp. red onion
pinch salt

Instructions

Chop mango and cucumber into 1/2 inch dice. Slice red onion very thinly and chop mint finely. Mix all ingredients together and serve cold.

Makes an excellent accompaniment to fish, chicken, and vegetable curries.
