1-1/2 cup fresh corn kernels
1 tsp. vegetable oil
1-1/2 cup diced peeled mango
1/4 cup fresh lemon juice
2 tbsp. diced sweet onion
2 tbsp. minced fresh mint
2 tbsp. minced fresh cilantro
1-1/2 tsp. grated peeled fresh ginger
1/4 tsp. salt

Instructions

Preheat oven to 400°F. Combine corn and oil, tossing well. Place on a baking sheet, spreading evenly. Bake at 400°F for 15 minutes. Cool. Combine corn, mango, and remaining ingredients in a bowl; toss gently.
