Mallorca Lukewarm Ray Salad

Ingredients
1 lb. | skate | 1 qt. | fish stock | 1/2 | onion | 3 oz. | sliced almonds | 3 oz. | butter | 1-1/2 tbsp. | vinegar | 1/2 oz. | chopped parsley | | Salt and pepper | 1 lb. | assorted lettuce | | Cherry tomato and parsley, for garnish |

Instructions
Cook the skate in the fish stock for 20 minutes. Prepare 4 plates with salad in a vinaigrette dressing. Remove the skate and flake. Divide the fish among the plates, placing it on top of the salad.
Heat the butter in a frying pan, and add the half onion, chopped. Sauté until it begins to take colour. Add the sliced almonds, parsley, salt, and pepper. When it is ready, pour the vinegar on. Spoon this sauce over the skate on each plate and serve.
