Loukma (Hot Turkish Doughuts)

1/2 tsp. | dry yeast | 1 tsp. | sugar | 1/4 cup | warm water | 1/4 cup | warm water | 1 cup | plain flour | 3/4 tsp. | salt | 1/2 cup | milk | | Oil, for deep frying | | Sugar mixed with a little cinnamon |

Instructions
Mix together the yeast, sugar and 50 ml. water until frothy. Combine the yeast mixture with the flour, salt, milk and 100 ml. water until it makes a smooth batter. Set aside in a warm place for 1 hour to prove/rise and thicken. Stir again.
Heat the oil in a deep fryer or wok until it reaches 170 to 180°C. Drop teaspoonfuls of the mixture into the oil, rolling them to ensure even cooking. When golden, remove from the pan and sprinkle with sugar and cinnamon.
