Lobster Newburg

6 tbsp. butter
2 tbsp. flour
3 cups cooked lobster, cut up
1/8 tsp. nutmeg
1 dash paprika
1 tsp. salt
3 tbsp. sherry
3 egg yolks
3 cups light cream


In double boiler, melt butter; stir in flour, nutmeg, paprika, salt and cherry. Add lobster. Beat egg yolks slightly. Add cream to yolks and mix well. Slowly stir yolks and cream into lobster. Cook over hot water, stirring until just thickened.
