Instead of water and sausage, I boiled a ham and used the stock and meat! Mmmm!!

Instructions
Briefly saute veggies in olive oil for 3-4 minutes. Place all ingredients, except sausage, in a large pot and simmer, covered, for about 2 hours. Dice sausage without casings and simmer 10 minutes. Drain. Add to soup 1/2 hour before serving. Top with Parmesan cheese.
