2 | lamb shanks | 6 cloves | of garlic, smashed and skins removed | 1 | onion | 1 | carrot | 2 | md. yellow potatoes | 1 | bay leaf | 2 cups | mushrooms | 1/2 bunch | of kale | 1/2 cup | parsley | 3 cups | dry red wine | 3 cups | water | | salt & pepper to taste |

Instructions
Roughly chop onion, garlic, carrot, bay leaf. Put in large pot with lamb shanks and cover with wine and water. Cook at a low simmer for 1 1/2 hours. Add chopped kale, potatoes and mushrooms and cook another half hour. Right before serving, throw in the chopped parsley.
