Ingredients
5 | Habanero or | | Scotch Bonnet peppers | 1 | TBSP Thyme | 3 | TBSP ground all-spice (fresh ground is best) | 4 cloves | of garlic | 1 | Medium Scallion (both green & white part) | 1 | TBSP brown sugar | 1 | TBSP salt - for marinade, 1/2TBSP for sauce | 1 | TSP fresh ground black pepper | 1 | TSP ground cinnamon | 1 | TSP nutmeg | 1 | TSP ginger | 1/4 cup | white vinegar | 1/4 cup | olive oil | 1/4 cup | light soy sauce | 2 | lime | 1 cup | orange juice (adjust qty for right consistency) |

Instructions
Put all ingredients in blender
Blend until well mixed and ground but not liquified

the story...
I used to buy jerk sauce. All store-bought sauces and marinades are awful.
Then, I got into home-made sauces that I'd pick up at street-markets in the Carribbean islands whenever I went there.
Then I found a Jamaican stand at a local market at home - with amazing sauces - absolutely the best!... but the family that ran the stand stopped shut it down last year.
This sauce is the closest to that home-made sauce I'd get at the markets!
