Ingredients
4 | lg. bell peppers | 1 lb. | ground beef | 1 | sm. onion, chopped | 1 can (15 oz.) | Hunt's tomato sauce | 1 cup | bread crumbs | 1 tbsp. | Worcestershire sauce | 1 tbsp. | chopped parsley | 1/2 tsp. | dried basil | 1/4 cup | grated parmesan cheese | 1 cup | shredded mozzarella cheese |

Instructions
Brown ground beef with chopped onion. Meanwhile, cut off tops of peppers and hollow out ribs and seeds. Place upside down on a paper towel in your microwave and cook on high for 6 minutes. Let sit.
After ground beef is browned and drained, add tomato sauce, spices, and worcestershire sauce. Stir until blended. Add bread crumbs and parmesan cheese. Mix together until bread crumbs are soaked through.
Place peppers in a microwave safe casserole dish and fill with stuffing mix. Microwave on high for 10 minutes. Rotate half way through if necessary. Add shredded mozzarella cheese on top and microwave on high for 1 minute to melt cheese. May serve with rice.
Author's Comments
Using the microwave for this recipe really cuts down on the cooking time. As a variation to the ground beef, you may mix some pork sausage in with it for added flavor.
