Preheat the oven to 425F. Rub olive oil over each potato, and place on the top rack in the oven. Bake for 20 minutes. Turn down heat to 375F and bake for 50 minutes or so, until the skin is crisp and the flesh is soft.
Cook and crumble the bacon. Grate the cheddar cheese. Slice the green onions.
Cut a cross on top of the potato, squeeze the sides, add sour cream, cheddar cheese, bacon and spring onions, as desired. Serve.
