Italian Baked Chicken & Pasta

1-1/2 cup | sm. pasta (I used elbows) | 2 tbsp. | olive oil | 1 cup | cubed chicken breast (1-inch cubes) | 1/2 cup | diced onion (about 1/2 a sm. onion) | 1 clove | garlic, minced | 1 | (14.5-ounce) can diced tomatoes with juice (I used the one with peppers, onions & garlic) | 1 (8) | can tomato sauce | 1 cup | shredded mozzarella | 1 tbsp. | Italian Seasoning | | Salt & Pepper | | Garlic powder | 1/4 cup | bread crumbs | 1/4 cup | grated Parmesan | 1 tbsp. | butter, plus more for buttering the baking dish |

Instructions
Start by cooking the pasta until just tender, about 5 minutes.
Meanwhile, saute the chicken in the olive oil for a few minutes. Add the onions and garlic, stirring to combine, and cook until the onions are soft and the chicken is cooked through, about 5 minutes more. Add the canned tomatoes, 1/2 cup of the mozzarella cheese, Italian seasoning, sprinkle of salt, pepper & garlic powder. Stir to combine. Place the mixture in a buttered baking dish. Top with remaining mozzarella cheese.
In a small bowl mix together the bread crumbs and the Parmesan cheese. Sprinkle over the top of the pasta mixture. Dot the top with small bits of butter. Bake @ 400 degrees until the top is golden brown, about 20 minutes.
Notes: This is also delicious with Italian Sausage (in place or combined with the chicken)
